The first and most ancient Parmigiano-Reggiano was made using the milk of the Red Cow (Vacche Rosse) breed.
Now produced in small quantities exclusively utilising Red Cow’s milk, this rare and exclusive “Blancs de Blanc style” cheese is aged for 40 months, well over the connoisseur’s recommendation of 36 months.
The flavour is full yet sweet and delicate with rich aromas including pineapple. The characteristic grainy texture has also developed many crystals from the extra-long aging process which makes it even more enjoyable.
